The dining tables of the 21st century are like Foucault’s panopticons. Your bites, chews, DNA, microbiome, but also data on food provenance and unruly molecules take part in a theater of metabolic control.  

The Extreme Biopolitical Bistro offers a space to experience such biopolitical “care of the self” happening on our plates through collaborative dinner enactments and prototyping of elaborate data-driven menus. The Bistro works as a kitchen lab with various props performing the food research on nutrigenomics, microbiome, but also hardware, machine learning, and blockchain where anyone can come and discuss their concerns about the future.

At the Turing Foodies dinner, meals are prepared by AI algorithms and turned into blockchain transactions. The dinner for Genomic Fatalists organized in our Nutrigenomics Lab serves meals customized to diners’ DNA profile. At the Gut Gardeners dinner, we eat to feed our gut microbiomes. We experiment with various custom-made kits and tools, including chewing sensors, electrolickable smart candies, Food Tarot cards, and algorithmic recipe recommenders.
