The dining tables of the 21st century are like Foucault’s panopticons. Your bites, chews, DNA, microbiome, but also data on food provenance and unruly molecules take part in a theater of metabolic control.  

The Extreme Biopolitical Bistro offers a space to experience such biopolitical “care of the self” happening on our plates through collaborative dinner enactments and prototyping of elaborate data-driven menus. The Bistro operates as an open kitchen lab performing a co-creative research on nutrigenomics and microbiome, but also hardware, machine learning, and blockchain where anyone can come and discuss their concerns about the future. We experiment with various custom-made kits and tools, including chewing sensors, electrolickable smart candies, Food Tarot cards, and algorithmic recipe recommenders. The dinners organized in our Nutrigenomics Lab serve meals customized to the diners’ DNA or microbiome profile. When no human participants show up, meals are prepared by AI algorithms and turned into blockchain transactions.
